Healthy alternative Mother's Day meal

City of Oaks Salad with Cranberries and Nuts:

 Serves 4

 Honey Mustard Vinaigrette:

1 tablespoon of honey

1 teaspoon of whole grain Dijon mustard

¼ teaspoon each of cinnamon, salt and freshly ground pepper

1 table spoon of apple cider vinegar

2 tablespoons of water

1 tablespoon of extra-virgin olive oil

 

City of Oaks Salad:

5 ounces of mixed salad greens

¾ cup of dried cranberries

¼ cup of toasted pine nuts, almonds or walnuts

¼ cup of (1 ounce) grated Parmesan cheese, manchego cheese, blue cheese or feta cheese

 

Directions for vinaigrette:

Combine the honey, Dijon mustard, cinnamon, salt and pepper in a small bowl and whisk until smooth. Whisk in the vinegar, water and olive oil.

 

Directions for salad:

Combine the salad greens, cranberries and nuts in a large bowl. Add the vinaigrette and toss to coat well. Spoon onto salad plates and top with cheese.
